I will not be suggesting what itinerary is suitable for you but sharing what i have done, accompany with wonderful photos (not professional photographer but would be able leave good memories) along the ways.

This is unquestionably the best episode of my Hong Kong trip! An experience that could definitely last. (when mention Hong Kong, always relate to food and shopping)
It's a pleasure cycling along a backdrop with unobstructed view of river and mountain, and fantastic continuous route without disconnection for vehicles.
From Tai Wai MTR and end at Tai Po MTR,
Renting of bicycle was uncomplicated and the location was great. Take MTR and set foot at Tai Wai Station. Exit A (map below) and towards right, the rental shop is stone throw away. The rental shop is at point 1. The friendly staff will guide you to collect bicycle. It's great we allowed return our bike at end point. If you can't cycle that far, then can make a U-turn back here.

And here we go..... (start at Tsuen Nam road cycling track along Shing Mun River)
(Above photo is at map point 3) Turn right and we be heading toward Shing Mun River.
Cross the bridge (map point 4) Use the left side of river trail with shade from trees.

Cycle further up will be Sha Tin Park via subway
Fortunately weather was great! Sunshine but not burning. Should be about 27 degree.

Awesome view of "Ma On Shan" mountain on the opposite coast behind Sha Tin river!
At the waterfront "Pak Shek Kok" promenade, we continue our cycling trail connecting Sha Tin and Ma Liu Shui, and awesome viewing platform for the panorama of Tolo Harbour.

*Take note of this junction to visit Tai Po Waterfront and route back to Tai Po MTR return bike.
Let's go Tai Po Waterfront Park take a look
After more than 2 hours, still enjoy the breathtaking view.
This is the waterfront park. It's has a 32m tower that was described like giant shell
and offer view of the entire park and the river.
Bicycle rental is available here as well.
Headed further down looks like a gathering spot to enjoy some snacks and desserts.
Time to replenish!

Watch out for this note written for biker to guide us the direction return bicycle. I think there is a English version if not, just need ask for direction to Tai Po Market MTR station
Here was slightly tricky. Fortunately, fellow local cyclists were there too. So we followed them.
You will need to push from (map below) point 1 to point 2, Elegance Garden.
Get down and push your bike across this MTR station.
And you will see bus interchange on left.
Keep going and you see a small block named - Elegance Garden. This the place to return bicycle.
